Because zombies, at this point in time, are so overdone that it seems like it is the publishers way of just copping-out because they know this will help sell the game. It will help sell the game to the age group that still think zombies and zombie modes are "wicked", so usually kids between the ages of 8-16; not to say there aren't some like early 20 year old dude-bros that think zombies modes are still "totally awesome bro". I enjoyed zombie games in fact two of my best friends I met because of Left 4 Dead, but that is a series that was all about quirky zombie horde/mutant fun times and it was one of the first/biggest of the time. After Left 4 Dead and Call of Duty: World at War's zombie mode, zombies in video games exploded as the "it" thing. Dead Rising, Dead Island, Dead this and Dead that, Zombies mode in 15 different Call of Duty titles, upset kids when a CoD release had a Spec Ops mode that year instead of zombies. It is ridiculous. It didn't help that one of the most popular franchises in the world was the Walking Dead either, it was clearly just the way our pop-culture was at the time. Though as far as Walking Dead and zombie games goes because of the two we did manage to get 3 awesome and amazing TellTale Games out of them with the 4th and final one on the way.
So what made me even want to talk about this in the first place, I mean Call of Duty WW2 came out and it has zombies again so why not direct your attention its way and point out its flaws. It's not needed because at this point Call of Duty and zombies modes are unfortunately like peanut butter and jam, they always go together. Even though in a game you are trying to realistically make a solid World War 2 effort into you add unecessary supernatural shit and it causes the history major/lover of historical things in me to just become so spiteful towards the game. No WW2 doesn't have my spite and glare because it's CoD. It is just zombies modes but one ticked me off in particular and caused me to point out how dumb zombie modes are.
It's the announced Operation Outbreak for Year 3 of one of my favourite games, Rainbow Six: Siege.

Brilliant, thanks Ubisoft, now on top of a shit zombie mode in one of the best shooters out there you're dragging that age demographic even more into things.
Seeing one of your favourite franchises cop-out like that sucks, I should've expected it because it is Ubisoft and because it is a First Person Shooter. Yet the way they tweaked this game, the way it has E-Sports/Pro League support, the way people take the game seriously, I thought "no way would they do this" but they are going to.
Just have to deal with it is what most people will say to me and yes for sure I'll just have to deal with Operation Outbreak but that's just it for myself and anyone else who takes R6: Siege moderately serious it is a slap in the face why should we just have to deal. Honestly it's a slap in the face to the Counter-Terrorist Units that are misrepresented in this kind of stuff and to use Call of Duty WW2 again, it is a slap in the face to veterans 1) that we even play games like that but 2) that we need to "add more horror and supernatural zombies" to something that was already horrific in the first place.
Games like Left 4 Dead had their time and place, like I said 2 of my best friends met me through that game, it was campy and funny and something Valve designed to just be fun to play around with. It was unique at the time, then it became overdone. A lot of people would say the reason we haven't seen Left 4 Dead 3 is because Valve doesn't like to make games that end in 3; but I think it's because they see a dying genre though I could be wrong.
So zombies this and zombies that but there will come a time when it isn't profitable and then that's when it will be gone. So my message to publishers is this, zombies modes aren't fun and they're boring as hell by this point so:
